How to Think Outside The “Box Lunch”

Forget everything you thought you knew about packing a lunch box — whether for kids or for yourselves — because we’ve got a few exciting ideas for you to try out.

1. Italian Lunch Box

This Italian lunch box will transport you to sunny Mediterranean summers, with the tantalizing scent of fresh basil and pesto. You’ll need fresh mozzarella, fresh tomatoes, basil, pesto, pine nuts, green and black olives, red and green grapes, a toasted slice of bread, and dressing (extra virgin olive oil or balsamic vinegar).

2. Vegan Lunch Box

Whether you’re vegan or not, a plant-based lunch is always a smart choice. To make this lunch box you’ll need an avocado, lemon wedge, celery and carrot sticks, and hummus. The ingredients in the vegan salad are cucumber, chickpeas, cherry tomatoes, brown rice, fresh parsley, green and black olives, extra virgin olive oil, salt, and pepper.

3. Energy Boost Lunch Box

This lunch is packed with protein and healthy fats to help you power through the rest of your day. You’ll need Greek yogurt (or Coconut yogurt, if you’d like a vegan alternative), maple syrup, fresh berries, a sliced red apple, a tablespoon of peanut or almond butter, and a handful of mixed nuts (almonds, walnuts, and cashews).

4. Protein Lunch Box

This lunch box is simple yet nutritious. All you need is roasted chicken breast, cherry tomatoes, two boiled eggs, a sliced red apple, and a tablespoon of peanut or almond butter.

5. Greek Lunch Box

Another Mediterranean lunch box, if you’re in the mood for Greek. You’ll need to make a Greek salad with cucumber, chickpeas, cherry tomatoes, feta cheese, fresh parsley, green and black olives, extra virgin olive oil, salt, and pepper. You’ll also need brown rice, a lemon wedge, and red and green grapes.
